Veg Pulao or vegetable pulao recipe is an easiest and quick recipe made with basmati rice, spices and vegetables of your choice. This pulao recipe is a comfort one-pot cooking when you don’t have enough time to indulge in cooking or you want to cook something on short notice. It can be had all by itself or can be accompanied by fresh curd/ yoghurt or raita or even salad or any Indian dal of your choice.
Vegetable pulao is a one-pot recipe that is frequently made in many Indian homes. It is the perfect one meal dish to be served in lunch and dinner and can also be prepared as a lunch box recipe or tiffin box recipe. This recipe is a basic version of a simple veg pulao recipe with very few ingredients like good quality basmati rice, dry spices, vegetables of your choice and some water. That’s it! Vegetable pulao is ready in just 2 pressure cooker whistles.
There are many variations of the pulao recipe in the Indian cuisine. It varies from simply mixed vegetable pulao to specific ingredient pulao like Tomato pulao, mushroom pulao, etc. Pulao recipes can be cooked in two ways, either you can cook rice along with stir-fried veggies in a pressure cooker or you can even have rice cooked before and just mix it with fried veggies and spices.
Various methods for cooking pulao:
All these methods can be used for cooking pulao recipes. Depending on the time you want to indulge in cooking or if you have a crunch of time like early morning weekdays, you can choose any method you like:
- Pressure cooker
- Electric cooker
- Pot or Kadhai
- Instant Pot
I have cooked this recipe in a pressure cooker and I will soon share the pulao recipes made in other methods.
Furthermore, I would like to share some suggestions for making a vegetable pulao recipe. First and foremost, if you can use basmati rice this will enhance the taste of pulao. In case basmati rice is not available or you are out of stock, you can replace it with Sona masuri rice. Secondly, garnish the cooked pula with chopped coriander leaves and cover with the lid for at least a few minutes. This way the aroma of coriander leaves gets absorbed in rice and it smells heavenly.

Materials
Main ingredients for veg pulao recipe:
- 2 cups Basmati rice
- 2 medium Onions roughly chopped
- 2 Potatoes chopped in cubes
- ¼ cup French beans chopped in cubes
- ¼ cup Carrots chopped in cubes
- 1 bell pepper chopped in cubes
- 1 bowl Cauliflower florets gobi florets
- ¼ cup Green peas fresh or frozen
- 2.5 cups Water
Spices for veg pulao recipe:
- 2 tbsp Cooking oil
- 1 tsp Jeera/ Cumin seeds
- 1 tsp Rai/ Mustard seeds
- 2 to 3 Green chillies roughly chopped
- 1 tsp Lal mirch powder/ Red chilli powder
- ¼ tsp Haldi/ Turmeric powder
- 1 tsp Kitchen king masala
- 1 tsp Garam masala
- 1 tbsp Lemon juice
- Salt per taste
Instructions
Soaking basmati rice for making veg pulao recipe:
- Take 2 cups of long grain basmati rice in a large bowl and rinse it under the running water.
- Soak the rinsed rice for about 15 to 20 mins in water.
- Drain the water and keep the rice aside.
For making veg pulao recipe:
- Heat 2 to 3 tbsp oil in the pressure cooker and add rai and jeera. Saute till it splutters and cumin turns brown.
- Add chopped onions and saute on medium flame till it turns translucent and golden brown in colour.
- Now add veggies of your choice. Here I am using potatoes, carrots, bell peppers, and french beans. Mix all the ingredients nicely.
- Then, add cauliflower florets and green peas. GIve a nice mix.
- Cover and cook for 4 to 5 minutes till the veggies are partially cooked and softened.
- Now, add dry spices - red chilli powder, haldi, kitchen king masala and garam masala. Also, add salt as per taste.
- Mix the spices and vegetables together and add 3 to 4 tbsp of water.
- After 2 to 3 minutes, add soaked and drained rice along with 2.5 cups of water.
- Add a tbsp of lemon juice and mix it nicely.
- Cover the pressure cooker with the lid and whistle on. Cook for 1 or 2 whistles and let the pressure settle down by itself.
- Now, open the lid and gently fluff the rice with the help of a fork, without breaking it.
- Sprinkle the chopped coriander leaves and again close the lid for few minutes.
- Serve the hot and spicy vegetable pulao with raita or curd.

Important tips to remember for making veg pulao recipe:
- Use good quality of basmati rice, as it enhances the taste of veg pulao.
- You can always add veggies or your choice or remove veggies from the above recipe that you don’t like.
- Adding lots of veggies makes it more nutritious.
- Also, make sure to add whole spices like bay leaf, cardamom pods, cloves, star anise, and also cinnamon sticks. I haven’t added these spices in the above recipe as I was cooking this for kids.
- Completely discard the green chillies and whole spices if you are making for children.
- If you are allergic to lemon just skip it. But, adding lemon while cooking rice, makes it cook faster and the grains retain their shape.
- Finally, serve hot and tasty veg pulao with fresh curd/ yoghurt or raita.
