Chinese veg fried rice recipe or Indo – Chinese rice recipe is one of the favourite fried rice recipes of most Indians. This delicious, flavourful and aromatic veg fried rice is easy and quick to make fried rice recipe. It includes lots of vegetables sauteed on the high flame which gives a nice crunchiness to the dish. Sauces blend very well with the sauteed veggies and give a nice and unique texture, flavour and aroma to the veg fried rice.
Veg fried rice recipe is popular and has become a staple food in many South-Asian countries. And, in India fried rice recipes are served as popular street food from Indo-chinese cuisine. This recipe is a win-win recipe when you have some leftover rice and veggies in your fridge. Just chop the veggies into small chunks and saute them on high flame. Later, add sauces and rice into the wok and VOILA!! Your yummy and delicious fried rice recipe is done.
In restaurants, they serve a variety of veg fried rice recipes and they all differ in taste. But, there are few common ingredients that are used in making all Indo-chinese recipes and it gives that unique taste and flavour to the dish. These ingredients are Ajinomoto (originally named as ‘monosodium glutamate – MSG’), soy sauce, celery and also olive oil. But, due to the health controversies on the consumption of Ajinomoto, I never use and always recommend to not use it. You can still make delicious fried rice recipe without using Ajinomoto.
Vegetables to be used in Veg Fried rice:
You can always use the veggies you like. The most common veggies that are used in almost all Indo-Chinese recipes are carrots, french beans, cabbage, spring onions, bell peppers, corns, baby corns, etc. Also, to make a particular veggie fried rice recipe you can use button mushrooms to make mushroom fried rice, Paneer to make paneer fried rice recipe, etc.
I would highly recommend you to use fresh cabbage thinly sliced or shredded in a food processor. This gives a unique taste to Chinese recipes like the one you get in restaurants.
You can alter the taste of this recipe, depending on your choice. To make it spicier use both red chilli sauce and green chilli sauce, along with peri-peri sauce. And for sweet and sour taste, use tomato ketchup, soy sauce and vinegar together. Usually, in India, any fried rice recipe is made with vinegar and soy sauce.
Variations of this recipe:
- Like I mentioned above, to make any particular veggie fried rice recipe, use paneer or mushroom.
- You can also add schezwan sauce to make schezwan fried rice. This is our favourite recipe and I will soon share this recipe on the blog.
- If you are a non-vegetarian, you can add scrambled eggs or any meat of your choice to the wok along with veggies and then add rice.

Veg fried rice
Materials
For Pressure cooking rice:
- 2 cups Basmati rice use regular Sona masuri rice if basmati is not available
- 2.5 cups Water
- 1 tsp Cooking oil
- Pinch of salt
Other Ingredients for making Veg fried rice:
- ½ cup Carrots finely chopped
- ½ cup French beans finely chopped
- ½ cup Capsicum finely chopped
- 1 cup Cabbage thinly sliced or shredded in food processor
- 1 bunch Spring onions greens & stock separated
- 1-inch Ginger finely chopped
- 5 to 6 Garlic cloves finely chopped
- 2 tbsp Oil
- 1 tbsp Soy sauce
- 1 tbsp Red chilli sauce
- 1 tbsp Vinegar
- Salt per taste
- 1 tsp Crushed black pepper
- 1 tsp Sugar Optional or you use 1 tbsp tomato ketchup
Instructions
For cooking rice:
- Take 2 cups of long grain basmati rice in a large bowl and rinse it under the running water.
- Soak the rinsed rice for about 4 to 5mins in hot or warm water.
- Now, drain the water and add the rice in a pressure cooker along with 2.5 cups of water.
- Then, add a tsp of salt or as per your taste.
- Also, add a tsp of cooking oil in the pressure cooker and cook the rice on medium-low flame for 1 whistle.
For making Veg fried rice:
- In a large thick bottom pan or kadhai or wok, heat 2 tbsp of oil.
- When the oil is hot enough, add in chopped white bulbs of spring onions and saute on high flame for few seconds.
- Keep the flame high, and add in chopped ginger-garlic into the wok and stir fry for few seconds.
- Now, add all the veggies, here I am adding carrots, french beans, capsicum and cabbage.
- Stir fry all the veggies on high flame for about 2 to 3 minutes without overcooking the veggies.
- Then, add green stock of spring onions and again saute for few seconds.
- Then with the help of a spatula, shift the veggies to the side and make space in the middle of the wok.
- Then, add soy sauce, red chilli sauce and vinegar and saute on high flame for few seconds.
- Then add salt as per taste, crushed black pepper and sugar into the wok and again stir for few seconds till the veggies retain some crunchiness.
- Now, lower the flame and add al dente cooked rice into the kadhai and mix gently without breaking the rice grains.
- Finally, garnish it with some chopped spring onion greens and veg fried rice is ready to be served.
- Serve hot and spicy veg fried rice with any Chinese gravy like veg Manchurian gravy or paneer chilli gravy.

- Then add salt as per taste, crushed black pepper and sugar into the wok and again stir for few seconds till the veggies retain some crunchiness.
- Now, lower the flame and add al dente cooked rice into the kadhai and mix gently without breaking the rice grains.
- Finally, garnish it with some chopped spring onion greens and veg fried rice is ready to be served.
- Serve hot and spicy veg fried rice with any Chinese gravy like veg Manchurian gravy or paneer chilli gravy.
Tips for making perfect fried rice recipe:
- Use the best quality long grain basmati rice or any brand rice, to get the perfect texture of rice.
- Rice should be cooked only 90% or till it is al dente. Rice should not turn mushy. And cool the rice completely before adding it in the wok or fried veggies.
- Most importantly, all the Indo-Chinese recipes should be cooked on high flame. This lends a nice aroma and also the texture is maintained.
- Cooking on high flame also leaves some crunchiness in veggies.
- Depending on your taste, you can add sauces of your choice like red chilli sauce, schezwan sauce, soy sauce, vinegar or also tomato sauce for some sweetness.
