Recipe for red sauce pasta vegetarian | Tomato pasta recipe with step by step description and video recipe. Pasta recipes are the staple food of traditional Italian cuisine prepared in a variety of sauces with lots of fresh herbs like Basil. Of all, red sauce pasta is the most popular, easy-to-cook and loved worldwide. Basically, here pasta is cooked in a classic red sauce made from fresh tomatoes, Onions, bell peppers, ginger-garlic, fresh or dried herbs.
This recipe for red sauce pasta vegetarian is one of the best pasta recipes you will ever make and I am sure you will definitely love this. Pasta is an all-time favourite recipe of kids and also of adults. Usually, pasta recipes are served as a whole meal in lunch or dinner, but, can also be had as an evening tea-time snack or breakfast recipe.
Preparing red sauce pasta recipe:
Preparing pasta is a time-consuming recipe but the efforts are worth it. To save some time for yourself, you can always make pasta sauce well ahead in advance and store in the refrigerator for a few days. But, I always prefer using fresh tomatoes rather using any pasta or pizza sauce. Making this recipe using only tomatoes will make it very tangy. So, to balance the tanginess flavour of tomatoes add fresh veggies of your choice. This will make pasta even healthier.
For Pasta, you can use semolina pasta or even whole wheat pasta. This recipe can be made using fusilli, farfalle, gnocchi, shell, spaghetti or macaroni pasta. I have made this pasta recipe using penne pasta along with fresh and healthy veggies like Capsicum, bell peppers, carrots and onions with a tsp of ginger-garlic paste. For tomatoes, you can use regular red & ripe tomatoes, but for a better taste, you should use Roma tomatoes or Italian tomatoes for making the sauce.

Materials
For Boiling pasta:
- 1 bowl Penne pasta
- 1 tsp Oil
- 1 tsp Salt
- 1 litre Water
Other Ingredients:
- 2 tbsp Oil
- 1 tbsp Garlic cloves finely chopped
- 1 tbsp Ginger finely chopped
- 1 Onion finely chopped
- ½ Carrot sliced
- ½ Capsicum cubed
- ½ Red bell pepper cubed
- 2 Tomatoes - red & ripe finely chopped
- Salt as per taste
- ¼ tsp Black pepper powder
- ½ tbsp Mixed herbs
- ½ tbsp Oregano
- 1 tsp Red chilli flakes
- 1 tbsp Tomato ketchup
- 1 tsp Red chilli sauce
- ½ cup Water
Instructions
For Boiling pasta:
- Boil 1-litre water in a large vessel or pan and add a tsp of salt and oil.
- When it starts boiling add a bowl full of pasta, I am using penne pasta here.
- Cook pasta on a medium flame for about 14 to 15 minutes or till it turns soft.
- After 15 mins, pasta doubles in size. Take a piece of pasta and try to cut it with a spoon. If it cuts easily, then it is cooked and turn off the flame.
- Strain out the pasta through a colander and keep it aside.
For making Red sauce pasta:
- Heat 2 tbsp oil in a large thick bottom kadhai.
- Add 1 tbsp of finely chopped garlic cloves and ginger. Saute on high flame for few seconds till the raw smell of garlic goes off.
- Add finely chopped onions and saute till it turns translucent and light pink in colour.
- Then add sliced carrot, capsicum and bell pepper in the kadhai. Saute for couple of minutes on high flame till it is partially cooked. Veggies should retain crunchiness in them.
- Later add finely chopped red and ripe tomatoes. Saute till it turns soft and mushy and is cooked perfectly.
- Add salt as per taste and mix well. Salt will speed up the cooking process of toamtoes.
- Now add black pepper powder, mixed herbs, oregano, red chilli flakes, and mix well.
- Add tomato ketchup and red chilli sauce. Mix the sauces and veggies together and saute for a minute.
- Add ½ cup of water or pasta drained water and mix well. Let it come to a boil.
- Now, add boiled penne pasta into the wok and give it a nice mix with the veggies.
- Mix all the ingredients together and cook for 2 more minutes.
- Turn off the flame and cover the kadhai or wok for atleast 4 to 5 minutes so that the flavours and aroma is completely absorbed in pasta.
- Before serving, again mix all the ingredients in the wok.
- Finally, serve hot and spicy red sauce pasta topped with grated cheese or as it is.

Important tips for making Red sauce pasta:
- Use red and ripe tomatoes for making any pasta recipes. If not available then you can use canned Roma tomatoes for making pasta sauce at home.
- You can even use store bought pasta sauce to save you some time. But for fresh and scrumptious taste, always try to make pasta sauce at home.
- You can even use tomatoes directly in chopped form, as I did in this recipe. This too tastes delicious.
- To keep it healthy, use semolina or whole wheat kinds of pasta rather than using pasta made from maida.
- You can use veggies of your choice and also remove the veggies you don’t like. Adding sweet corns, baby corns or mushrooms makes it healthier and tasty.
- You can always use herbs either in fresh form or dried form. It gives a nice aroma and flavour in the recipe.
- Lastly, if you like more saucy pasta you can increase the number of tomatoes or pasta sauce in the recipe.
- Serve the hot or warm red sauce pasta topped with grated cheese.
