Dhokla Recipe | Instant Sooji Dhokla | How to make Instant Rava Dhokla
Dhokla recipe is an instant and quick breakfast recipe yet very fluffy and delicious in taste. This recipe doesn’t need any grinding or fermentation process. This soft and spongy dhokla recipe is made with whipped yoghurt or buttermilk. Rava is ‘Semolina‘ in English.
Instant rava dhokla can be made using either yoghurt or lemon juice with water. Today, in this recipe I am adding Eno fruit salt which gives more fluffiness to the batter. And it does not taste weird as it does on using baking soda. It is typically served in breakfast in Gujarati cuisine but can also be had in lunch and dinner.
Traditionally, khaman recipe is prepared from besan or chickpea flour which has to be fermented batter, whereas this rava dhokla recipe is instant recipe and fermentation process is not required. Making this recipe is much healthier and tastier than the khaman, and easy to digest. Whereas, khaman is heavy on the stomach and makes uneasy to digest.
Some important points to consider while making rava dhokla. First, mix the yoghurt and rava (semolina) and keep the batter aside for 15 to 20 mins. Then, just before steaming the batter, add Eno fruit salt which gives a nice aroma and adds fluffiness to dhoklas. Second, do not use turmeric powder and baking soda combination it will result in red colour and spoil the dish. Lastly, add the tempering on the top of the steamed batter which is an ultimate stroke to get taste and aroma.
