Making this salad couldn’t be simpler! Just chop the fresh and crunchy salad veggies and a few fresh herbs whatever you like may it be cilantro leaves, basil leaves, parsley, lettuce leaves or dill leaves. In this post, I have used dill leaves for dressing up my salad. That’s it! and you are good to go.

If you are the picky eater and does not like eating salads, then you are somewhere missing out with your salad dressings. Follow the instructions in this post and you will be thanking me later. 

Basically, olive oil, lemon juice and my favourite apple cider vinegar go very well with freshly chopped coriander leaves. If you have not yet tried this trio combination, then you must try this now. This cucumber tomato avocado salad will surely kick your taste buds. Although, this salad recipe is the most versatile recipe that can be made with any variety of veggies and salad dressing.

This Cucumber tomato avocado salad is called as Kachumber or kuchumber salad in Indian cuisine except for the avocados. Even the kachumber can be prepared with many variations. You can add mint leaves, roasted cumin powder, chaat masala, Kala namak, etc. Moreover, you can mix the entire salad with fresh curd or dahi to extend the recipe for making raita dip.

Materials

  • ½ English cucumber chop into bite size
  • 5 - 6 Cherry tomatoes cut into halves
  • 1 Red onion thinly sliced
  • 1 Ripe Avocado chop into bite size
  • Few dill leaves finely chopped

For Salad dressing:

  • 1 tbsp Extra virgin olive oil
  • 1 tbsp Apple cider vinegar
  • 1 tbsp Lemon juice
  • Salt as per taste
  • ½ tsp Mixed herbs

Instructions

  • In a large mixing bowl, add ½ chopped English cucumbers, 5 -6 halved cherry tomatoes, 1 sliced red onions, and 1 chopped avocado.
  • Now for preparing salad dressing, in a small bowl add 1tbsp of each olive oil, apple cider vinegar and lemon juice. 
  • Then add salt, mixed herbs and finely chopped dill leaves. Give it a nice mix and pour over the chopped veggies.
  • Toss gently all the chopped ingredients and salad dressing until veggies are evenly coated.
  • Serve, the cucumber tomato avocado salad garnished with a sprinkle of mixed herbs.

Important tips for making the salad:

  1. Being the versatile recipe, you can add or remove any veggie of your choice. To make it healthier add boiled corns, boiled beans, cilantro leaves, etc.
  2. For making salads, always use fresh veggies and not the stale and overripe ones.
  3. If you don’t have cherry tomatoes, you can also use Roma tomatoes or normal tomatoes but gorgeous red and juicy tomatoes.
  4. Use fresh herbs for garnishing as a salad dressing. Herbs like cilantro or coriander leaves, parsley, lettuce leaves, also dill leaves.
  5. If you are using avocados, cut just before you are serving to prevent browning of avocados.
  6. If you have leftover salad and avocados present in it, add extra lemon juice and securely cover it with plastic wrap.
